VINIFICATION
Harvesting by hand and destemming. Fermentations take place in thermo_regulated stainless steel vats for 6 to 10 days depending on vintages.
Stays in vats between 3 to 4 weeks in order to fully extract the inner quality of the soil.

MATURING
100% French oak Barrels (60% new oak, medium roast, fine grain)
made by 6 different coopers.
Duration: from 14 to 18 months depending on vintages
The wine if fined and filtered

KEEPING TIME
Château Mongravey Cuvée Prestige will reach maturity in 8 to 10 years and will keep for fifteen years.
